The Montague 03384-7 Range Thermostat W/Dial 3/16" X 8" 36" Cap 150-400°F BJWA is used in compatible commercial cooking equipment. To control the flow of gases based on the perceived temperature, it will enable the appliance to operate within a stable range of heat. It is fitted into griddles and grills in restaurant and kitchens where the accuracy of cooking temperatures is required in the preparation of batch foods. The thermostat becomes a part of the control system of the appliance through its capillary and sensing bulb and it works in liaison with the burner assembly to regulate the amount of heat produced as required during cooking cycles.
