The Southbend 1162523 Ceramic Grill Briquettes 50 Pack is composed of 2-1/4 inch square design to be used in commercial charbroilers. These are placed over the burners to spread the heat evenly and to prevent drippings, which improves the cooking performance and adds to uniform temperature throughout the grilling surface. They are installed in the cooking chamber as part of the heat management system to support even searing and cold spots under the food. These are substituted with kitchen and service users in applications to maintain efficient operation and support performance of the appliance in high-volume foodservice conditions.
