The Hobart 13523 Thermostat W/Dial 3/16" X 8" 36" Cap 150-400°F BJWA is a temperature control part designed to be compatible with commercial cooking equipments. It control the operation of burner by sensing the temperature via its remote bulb and capillary system and adjusting the flow of gas to keep the desired range of heat. It is fitted in gas-fired griddles and other similar parts frequently found in restaurant, and kitchens. The thermostat is attached to the control system of the appliance and operates continuously during cooking cycles to stabilize temperature output and assist in maintaining consistency in food preparation.
