The Alto-Shaam 4874 Holding Cabinet Heating Cable kit 120 feet is a spare heating element system to be installed in a compatible cabinet to ensure the preservation of temperature and moisture of prepared foods. The cable passes inside the cabinet to give out heat, which, with the maintenance of uniform holding conditions without overcooking. This kit is installed behind access panels, and is linked to the electrical system of the cabinet, and is part of the thermal management system of the unit to maintain set holding temperatures during service.
