Step1: Turn off the fryer and allow the oil to cool completely.

Step2: Disconnect electrical power and shut off the gas supply.

Step3: Drain oil below the probe level if necessary.

Step4: Remove the stuffing box fitting and disconnect the probe leads.

Step5: Install a new probe, secure the stuffing box, and reconnect wiring.

Step6: Refill oil, restore power, and test temperature operation.
