The APW 2000100 Thermostat 150 - 400 F BJWA CCW controls the temperature and changes the amount of electrical current to keep the temperature within the desired range. It works by a control system whereby the temperature varies, and the circuit is opened or closed as required to stabilize the situation. This element is normally fitted in compatible commercial cooking appliances in which temperature regulation is needed to operate. It is intended to be used in a consistent thermal regulation, which is why it is used to control the heating cycles.
