The Imperial 1091 Controller Cook and Hold is an oven control unit targeted to be used in commercial kitchens. It controls the time and temperature of cooking to prevent overcooking of food and maintains a holding temperature to prevent overcooking as well as to provide consistency in baking and roasting processes. This controller is installed on the control panel of the oven and replaces the original electronic interface and is connected with the thermostat and timer system of the oven, allowing automated switching between active cooking and safe food holding during professional kitchen operations.
