The Southbend 1195500 Brass Hood Orifice is made to manage the gas flow in compatible commercial cooking equipment. It has 3/8"-27 threading and a length of 1/2" and it is installed directly into the burner assembly at the gas entry point. Its purpose is to measure the quantity of gas being fed to the burner to facilitate adequate combustion. This element in uniform heating of cooking surfaces in the foodservice operations. This is part of the gas system of the appliance, where the gas valves and burners control the flow of fuel and maintain constant temperatures throughout the cooking cycles.
