The Vulcan Hart 00-723258 Thermostat Right Hand works by adjusting the heat inside the griddle so that the cooking surface can be kept at the temperature needed during the cooking process. It operates on a temperature-sensitive system that reacts to the increase or decrease in heat levels and turns on or off the heating elements accordingly. This right-hand thermostat is made to fit only compatible units and is installed in a specific position to allow a fine control of one side of the cooking surface and supplements the entire heating system.
