The Hobart 00-719197 Top Burner Valve 1/8" MPT X 3/8"-27 Off/On works by regulating the flow of gas to the top burner to allow the fully open and fully closed positions to be controlled. It works on a basic turn system which allows or prevents supply of gas, so that there is accuracy control when cooking. This valve is normally mounted in the commercial kitchen ranges or cooktops, and is located in the gas line, which leads to the top burner assembly, where it is necessary in controlling the flow of gas to the burner.
