The Star Mfg WS-59282 Thermostat with Dial 3/16" X 8" capillary & 36" BJWA sensing tube is a temperature-regulating part that is applied to commercial cooking equipment. By measuring the temperature in the capillary probe it regulates the operating heat level of the system from 150°F to 400°F by turning heating elements on or off to achieve and keep the desired temperature. It is normally used in appliances and warming units that desire a consistent temperature for cooking and food secure. The external dial is used to provide a manual temperature adjustment for the operator within the set limit. It is an integral part of the appliance control system.
