The Hobart 00-719951-00053 Brass Hood Orifice is a gas control component that is applied in salamander broilers. It has 3/8"-27 threads, 1/2" length, and a size of 53 calibration and is mounted at the burner gas inlet to control the flow of fuel. This orifice keeps the intensity of flame and even heat distribution over the cooking surface constant in commercial broiling applications. In the system, it works with the gas valve and burner assembly to regulate the combustion to aid in the performance of broiling and the consistent operating temperatures of the salamanders during service.
