The Hobart 00-275465 Aluminum Dough Hook 20 QT can be used with a compatible mixer hub and is used to rotate through the dough to mix the ingredients and create the texture by folding and turning the dough in a consistent manner. It holds the contents of the mixing bowl in a curved aluminum design which passes through thick mixtures, so that it can be used during mechanical mixing cycles in a continuous manner and be continuously moved throughout the batch. It is mounted in commercial countertop or floor mixers with 20-quart capacity bowls in food preparation settings and fits within commercial mixing operations in bakery and kitchen operations.
