The Star Mfg 2J-6726 Fryer Thermocouple 18" 20-30mV 1980 Series is a temperature-sensing part, which is used in commercial systems. It identifies the heat of a pilot flame and produces a millivolt signal to maintain the gas valve open. It is installed close to the pilot assembly and operates with the gas controls to avoid the flow of fuel in case the flame is lost. This thermocouple is used as a component of the ignition security system of the fryer.
