The Hobart 958827-000G3 Convection Oven High Limit Thermostat Disc Type is a thermal safety component used to detect excessive heat within compatible commercial kitchen assemblies. Its disc-type construction uses a temperature-responsive switching mechanism that changes the electrical contact state at a predetermined temperature. Installed at the designated high-limit sensing point, the component monitors heat generated around the oven chamber and heating area.
