The Henny Penny 140253 Hi-Limit Thermostat with manual reset kit 425 o C/218 o C is a temperature controller installed on compatible commercial fryers to avoid overheating. It is installed in the control circuitry of the fryer to monitor internal temperatures and cut the circuit should the fryer be running above the rated limit, it then requires a manual reset before it can be turned back on.
