The Alto-Shaam ALTTT3329 Oven Thermostat is a temperature control. It has a 3/16 inch sensing bulb with an 11-1/8-inch capillary tube and a temperature span of 100-325°F, which is very precise in monitoring and controlling oven temperatures. This thermostat is usually placed on the inside of the oven cavity, and it makes sure that the cooking cycles are controlled accurately to maintain the same level of heat to cook the food in a similar manner. It use in commercial kitchen set-ups where precise control of temperature is paramount.
