The Southbend G624 Oven BJWA Thermostat 3/16" x 12" Bulb 36" Cap and Stem is a commercial control for internal cooking temperatures. It has a sensing bulb and a capillary stem that run into the oven cavity to sense the heat, and the thermostat is able to signal the control system to raise or lower the heating elements. This thermostat is fitted into the control assembly of the oven and assists in the maintenance of the set temperatures in normal operation. It is generally installed in restaurant and foodservice ovens as a temperature control unit.
