The Blodgett R2630 Convection Oven High Limit is a safety control component used in commercial convection ovens. It is a thermal cut-off part which shuts off electrical power to the heating system when internal temperatures rise beyond safe operating limits. It is shielding the cavity, wiring and other components around the cavity against overheating. In actual commercial kitchen applications, it is mounted in the control circuit and works automatically without the need for any user. It is usually changed when it is being serviced or when it is being shut down so often due to a fault.
