The Star Mfg 2R-Z1299 Thermostat Knob is a control component user interface that is on commercial fryers to allow them to set the cooking temperatures manually. It is attached to the control shaft of the thermostat allowing the operators to rotate and choose the required temperature range when preparing food. This dial can be used to keep the temperature of oil steady and constant, physical mechanism for changing the amount of heat during service. It is a component of the temperature system of the fryer, relaying operator control to the thermostat control to aid proper heat control and proper operation under normal usage.
