The Middleby Marshall M4225 Motor and Blower Assembly is applied to move the hot air throughout the cooking chamber. It can be installed on the inside of the oven housing and works by pushing the airflow that assists in evenly heating the food products that are in motion. This assembly is linked to the drive and heating systems of the oven to ensure that the condition within the system is controlled. The assembly is used in the commercial foodservice settings where conveyor ovens are used to carry out continuous baking operations.
