The Pitco P6071339 Orifice is a replacement part which is used to measure the flow of natural gas to commercial fryer burners. The opening size #39 is used to regulate the fuel flow to ensure that there is a constant combustion and the cooking temperatures are constant. It is placed at the burner manifold and it operates together with air shutters and valves to make sure that there is an even distribution of the flame in the fryer. It is a hole that is replaced in the course of regular maintenance or gas system modifications or when abnormal flames are observed.
