The Pitco PTB1003802-C Baffle Weldment is an internal part of the fryer in a compatible commercial system. This piece has a 4-round tab configuration to guide heat flow and control burner operation of the fryer assembly during operation. The baffle is installed inside the unit and is a part of the heat distribution and combustion system in the fryer, and helping to maintain the uniformity of the cooking temperature throughout the frypot area.
