The Robot Coupe RA655 Blade Top is an upper stainless steel knife blade designed for use in compatible commercial foodservice equipment. Mounted on the upper position of the blade assembly shaft within the processing bowl it rotate at high speed to cut chop mix and emulsify ingredients during food preparation. The blade works in conjunction with the lower blade to create consistent product circulation and uniform processing throughout the batch. It interfaces directly with the drive shaft, motor assembly and processing bowl converting motor-driven rotation into the cutting action required for commercial food processing operations.
