The Alto-Shaam SN38110 Holding Cabinet Sensor is a temperature-sensing component used to monitor the internal air temperature of compatible heated holding cabinets. Installed inside the cabinet compartment, the 1-3/4"sensor detects temperature changes and sends a resistance signal to the electronic control system. The controller uses this input to cycle the heating elements on and off maintaining the programmed holding temperature. Working with the control board, wiring harness and heating circuit, this sensor uses heating levels and supports proper food holding operation.
