The Southbend SOUB940000201 Oven BJWA Thermostat 3/16" x 12" Bulb 36" Cap and Stem is a temperature control element that is applied commercially to heat the interior. It is mounted in the control system of the oven, and the sensing bulb is mounted inside the cooking cavity to check the temperature variations. This information is sent to the thermostat mechanism via the capillary tube and the stem, which delivers power to the heating system. This thermostat works with the temperature regulation assembly of the oven when working with a normal foodservice settings.
