The Lincoln 370358 Pizza Oven Thermocouple is temperature sensor that is used to detect the presence of a flame in compatible gas pizza ovens. It produces low voltage when exposed to the pilot flame which is used to verify that the flame is lit and gas can continue to flow. In commercial kitchens where ovens are used frequently, this thermocouple is a security feature. Its role of this thermocouple in the system is to provide a signal that gas is only delivered when flame is present which assists to control the ignition process and maintain the performance of the oven during operation.
