The Hatco 02.16.021.00 Holding Cabinet Thermostat is a mechanical temperature-regulating component designed for compatible heated holding cabinets. Its 1/4-inch by 3-inch sensing bulb detects heat inside the cabinet, while the 24-inch capillary tube transmits the temperature response to the thermostat control. Adjustable from 100°F to 195°F, the system changes its electrical contacts according to the sensed temperature, controlling power to the cabinet’s heating circuit. Mounted with the sensing bulb positioned in the heated compartment, it cycles the heater on and off to maintain the selected holding temperature for food and other temperature-sensitive contents.
