The Star Mfg WS-50290 KA Thermostat 100°F -200°F 5/16" X 8-1/2" 72" CAP operates by detecting a change in temperature in a cooking or heating component and directing the amount of energy flow to ensure the desired temperature is maintained. It works with an internal sensing element and capillary system that reacts to the changes causing the attached equipment to heat or cool accordingly to maintain the desired range.
