The Hobart 00-335553-00001 Thermostat Assembly is an accurate temperature regulating component that helps to stabilize and better heating results in commercial ovens. It operates by detecting the internal temperature of an oven via its 3/16" sensing bulb and acts by adjusting the amount of the heat supplied to keep the oven at the desired temperature, avoiding not only undercooking, but also potentially overheating the oven. This thermostat assembly will give reliable performance and easy installation with a 14-3/4" durably made capillary tube and a 1/2" NPT connection.
