The Hobart 410841-23 Gas Control Valve controls the flow of gas in the unit by reacting to temperature controls and secure controls opening and closing the gas flow based on these controls. It is connected to the control system of the fryer to ensure that the burner is kept operating at the same rate throughout the cooking cycles. It is installed in the gas line assembly of commercial fryers and is usually installed between the gas supply. The valve also synchronizes the ignition timing and gas flow, and can be controlled to perform controlled heating operations in conjunction with a linked thermostat and pilot system.
