The Lang LG30402-12 Thermostat 200°F-400°F 60" CAP SP is a temperature control component that senses fryer oil heat through a probe and cycles electrical contacts to maintain a set range. Thermostatic adjusts power flow based on temperature fluctuations to keep fryer operation within controlled limits, using sensing bulb and capillary tube that transmit heat changes to the control switch for automatic response. It is placed in commercial fryer control housing and connected to temperature sensing circuit, positioned behind the control panel for direct interface with fryer heating elements, safety controls and operational temperature regulation circuits in the conditions.
