The Star Mfg 2T-30402-36 Thermostat 200–550°F controls the operating temperature in compatible commercial cooking equipment by monitoring heat through its sensing bulb and capillary assembly. As the temperature changes, the thermostat opens or closes the electrical circuit to cycle the heating element and maintain the selected setting between 200°F and 550°F. Installed behind the control panel with the sensing bulb positioned inside the heated cavity, it works with the equipment's electrical heating system to provide stable temperature regulation, assisting in maintaining consistent cooking conditions throughout normal operation.
