The Vulcan Hart 00-844483 Thermostat 350°F 24 inch Capillary controls the amount of heat inside the steam kettle by measuring the temperature and regulating the heating cycle. It works through its capillary design which measures temperature changes and communicates the changes to the control system to maintain the system at a fixed rate. This component is found in the heating unit of the kettle and it is used to measure and control the temperature to ensure that it can operate within the required range of temperatures to cook various foods.
