The Star Mfg 2T-38968 Thermostat is a mechanical device used in ovens to regulate temperature fluctuations ranging from 100°F – 450°F through a capillary tube. This thermostat works on the principle where there is gas carried in the capillary tube which expands with heat, this causes the thermostat to switch off the cooker to the needed set temperature for effective cooking. The advantages of this thermostat are as improved cooking efficiency and decreased energy consumption as well as better food quality due to constant temperatures.
