The Alto-Shaam TT3057 Thermostat controls heat within the oven chamber of commercial equipment. Its sensing bulb measures 3/16 inch x 15-3/8 inch and connects to a 42-inch capillary that extends between the sensing point and thermostat body. It regulates heat by using a sensing bulb filled with thermal fluid that is mounted inside the cooking or holding chamber. As temperature changes, the fluid expands and contracts, mechanically actuating the thermostat switch to open or close the heating circuit. It is mounted in holding ovens and warmers where it interfaces with the heating elements and control dial to maintain a set operating temperature range.
