The Anets P8902-58 Hi-Limit Thermostat Control is used to check the temperature of cooking oil and the electric circuit when the temperature exceeds the limit. It has an internal sensing system, which senses when the heat is too much and shuts down the heating system until the temperature goes back to a reasonable level. This element is normally mounted in the control section of the fryer and is linked to the heating circuit, where the temperature control and safety cutoff are needed. It is used together with the thermostat and heating components of the fryer to control over-temperature situations when the fryer is used in a commercial kitchen.
