The Garland 1017505 Thermostat FDO-1 W/ 72" 7/16" CAP CCT is temperature control unit that is used in commercial cooking equipment. It measures the internal temperature and regulates the output to keep the conditions of cooking the same. It is linked to a capillary tube which detects the change in temperature and acts on it when it is in operation.
