The Garland UK27 Thermostat is a mechanical temperature control component used in commercial gas ovens and broilers. It works by measuring the temperature of the cavity with a capillary tube and the temperature-sensing bulb and controlling the gas flow to keep the desired heat setting. This part is mounted behind the control panel and links to the gas control system of the oven and is the main temperature control part of the oven. It has a 72" capillary assembly and 7/16" gas connections and is generally used in cooking equipment that needs to be temperature controlled within operating ranges.
