The Frymaster 826-2423 Probe Assembly is a sensing component in the commercial fryer that monitors the oil temperature and interfaces with the control panel. It is housed inside the cooking chamber where it measures temperature, during the frying process. The assembly connects to the electrical system and assists in maintaining temperature. It is widely used in commercial fryers and is in constant operation. It is usually replaced during maintenance when it is not providing accurate readings enabling the fryer to be used for multiple cooking sessions.
