The Frymaster FM8262423 Probe Assembly is a monitoring system used with commercial fryer to measure the oil temperature and transmit it to the interface. It is located within the tank, where it can sense temperature changes. This model is connected to the fryers internal electronics to enable controlled cooking. It is common in commercial cooking and is part of computerized control networks. It is usually replaced during maintenance when the response of the sensor is slow enabling it to be used during normal frying operations.
