The Hobart 836955 Kettle Faucet 1-1/2" Draw Off Valve regulates the flow of hot liquid products in the kettle out through the opening. It operates by opening an internal valve when the handle is turned, and the soups, sauces or stocks flow through the spout. This is a component that is fitted on the lower draw-off port of compatible commercial steam kettles. The assembly guides the liquid food products in the process of draining or transferring portions. It is applied in commercial foodservice kitchens where large quantities of liquid preparations are cooked in kettles and then, after cooking, are dispensed in pans.
