The Pitco B3316801 Temperature Probe Kit Assembly is a part that measures the temperature of the oil in the fryer by sensing the amount of heat. The probe reads the temperature of the oil around it and transmits it to the control system of the fryer which then varies the heating cycle to suit. This communication enables the control circuit to control the operation of the burner or heating element depending on the measured temperature. The temperature probe kit is fitted in fryers compatible with it and it is connected to the control wiring harness that interfaces with the temperature control system of the appliance.
