The Pitco PTB3316801C Temperature Probe Kit Assembly is an appliance that measures the temperature of the cooking oil in the frypot and transmits the value to the control system of the fryer. The probe measures the temperature variation of the oil and converts it to an electrical signal which is then utilized by the control board to control the operation of the burners during cooking cycles. The kit contains the sensing probe and connection parts that are specific to fryer set-ups. It is mounted in the compatible gas fryers, and it is located in the frypot area, close to the heating area
