It works through the control of internal temperatures and transmitting the data to electronic controls to sustain programmed cooking or holding cycles. where it is connected to the control board through the plug and fitted firmly as a part of the temperature sensing and control system of the unit to proper monitoring and coordination with the internal control system to ensure uniformity.
