The Star Mfg 2E-41100-08 Convection Oven Sensor Probe Wire and Plug 1/8 X 18" is used to measure the temperature by sensing the amount of heat using the sensing element. It works by transmitting an electrical signal through the 39-inch wire to the control system which enables it to control cooking cycles precisely. The sensor probe is fitted into the interior cavity of the compatible, where it is firmly mounted with the plug connecting to the internal control board as a part of the temperature monitoring and control system of the appliance.
