The Star Mfg Mfg Manufacturing Z4609 Thermocouple 24-inch is a flame-detection sensor with 20-30 mV output, which is used with 1980 series commercial griddles. It has a snap-fit mechanism to make it easy to attach around the pilot flame, and it detects heat, giving a millivolt signal to the control assembly of the griddle. This is used in kitchen applications to make sure that gas is not allowed to pass on until the pilot flame is lit to verify that the flame is burning properly and gas does not accumulate. It is part of the flame-sensing which is used to assist with the gas controls to maintain consistent cooking performance.
