The Southbend 1011201 Range Thermostat W/Dial 3/16" X 11-5/8" KXP controls the temperature of the commercial oven. The expansion of heat in the sensing bulb sends signals to the control mechanism where the amount of energy flow is adjusted to keep the desired temperature in the system without human intervention. It is fitted in the assembly and is normally placed in the proximity of the control interface or upper chamber space where the sensing bulb can effectively check the internal heat condition throughout the operation cycle.
