The Southbend SOU1011299 Range Thermostat W/Dial 3/16" X 11-5/8" KXP uses a remote bulb and capillary system to sense the commercial oven. It controls the heating circuit by turning electrical flow on and off based on the dial position and temperature input based on the temperature changes in the oven cavity to stabilize control operation. The sensing bulb is installed on the oven control panel and the sensing bulb is placed in the cooking chamber to monitor the temperature to ensure uniform sensing operation.
