The Hobart 408379-00003 Burner Valve 1/4" MPT X 1/2" CCT directs the gas inside the cooking equipment in the commercial system. It is placed at a point midway between the supply line and the burner assembly and measures the flow of gas to enable ignition, which produces heat.
